This Choc Beetroot Loaf is perfect for lunchboxes and freezes well. The recipe makes one loaf or 18 muffins.
Ingredients
- 1 ¾ cup self-raising flour
¾ cup brown sugar
⅓ cup cocoa powder
1 tsp baking soda
425 g tinned beetroot, drained or 1 x 250g pack of ready to eat beetroot
120 g butter, melted
2 eggs
½ cup milk
1 tsp vanilla
¼ cup chocolate chips (optional)
Instructions
- Preheat the oven to 190°C (170°C fan-forced).
- Mix flour, sugar, cocoa powder and baking soda in a bowl.
- Add the beetroot, melted butter, eggs, milk and vanilla to a blender or food processor and blend until smooth.
- Pour the wet ingredients into the dry and gently fold until just combined.
- Fold through the chocolate chips if using.
- Pour into a lined loaf tin and bake for 45 minutes, or until a skewer comes out mostly clean.
- Allow to cool in the tin and then transfer to a wire rack. Allow to cool completely before slicing.

To bake into muffins, reduce cooking time to approx. 20 minutes or until a skewer comes out mostly clean. Makes 18 muffins.
